30 Days About Me Toni from A Daily Dose of Toni, is hosting this 30 Days About Me challenge and today's topic is "My Favorite Recipe." As anyone who knows me can attest to, I love to eat. I love good food. I especially love good food that's simple and quick to prepare and make. I just don't have the time like I used to, to make things from scratch... with the exception of holidays.

Here's three of my favorite recipes -- two that are quick and easy, and one that's from scratch, but I only make it two to three times a year.

Broiled Tilapia Parmesean

Potato and Onion Fritata

The Great Pumpkin Cake



The wonderful thing about this Pumpkin Cake is that I adapt it to Christmas by adding red or green food coloring instead of orange, and make the leaves look like holly leaves. I've also made it for Easter using a pastel color, like pink or blue. The cake is so moist and delectable. I have to thank Martha Stewart for this wonderful Great Pumpkin Cake recipe.

@Kerry - the cake is divine! And I too, love potatoes... a little too much. Smile You can use Egg Beaters or egg substitute. Smile It seems like I made it once with 15 or 16 eggs (all I had at the time), and it turned out fine.
